Barbara’s Tomato Zucchini Casserole
This recipe doesn’t have specific measurements of ingredients, I make them up or change them around based on what I have or what I feel like. This recipe was built from my Dad describing his favourite childhood dish to my Mom, who then played around with the recipe until my Dad said it tasted “just like my mothers.”
My grandmother on my Dad’s side, Barbara Jones, died before my parents even met. While I am named after her, there is little I know about her other than she was a great athlete and could cook a mean meal in the kitchen….sounds like we would have gotten along well!
Prep Time – 25 minutes
Cook Time – 2 Hours
Servings – 8
- 3-4 large tomatoes
- 4 medium zucchini
- 1 yellow onion
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh oregano
- Shredded cheddar cheese
- Grated parmesan cheese
- Preheat the oven to 350 degrees
- Slice the zucchini, onion and tomatoes
- Grate the cheddar and parmesan cheese (I LOVE cheese, so I go nuts here)
- Chop the fresh herbs
- Grease the bottom of 9 by 12 casserole dish with some oil of your choice
- Layer ingredients:
- Zucchini
- Onions
- Tomatoes
- Herbs
- Cheese
- Zucchini
- Onions
- Tomatoes
- Herbs
- Cheese – make sure the top layer has sufficient cheese coverings
- Cover and bake for 45 mins
- Uncover and bake for 45 mins
- Remove from the oven and let sit for 10-15 minutes
- Serve and ENJOY ?
