I beet you can’t have just one bite!
Prep Time – 20 minutes
Cook Time – 40 minutes
Servings – 8-10
Ingredients
2 roasted beets (or 3-4 if small)
1 can chickpeas, soaked and rinsed
Zest and juice of lemon
2 Tbsp tahini paste
2 cloves garlic
Sea salt to taste
Bunch of parsley, roughly chopped
Instructions
- Place beets in the oven at 400F for 40 minutes until tender and place aside to cool.
– - In a food processor, add in the beets, chickpeas, lemon, tahini, garlic, salt and parsley and blend on medium speed until combined. Add in more tahini if you prefer a more creamy texture.
– - Serve in a bowl with veggie sticks or crackers. Place in an airtight container in the fridge
to store.
