We all have pantries full of goodies that we’ve accumulated throughout the year. Why not put all those great ingredients in use and whip yourself up a batch of these refine sugar-free Energy Bites! Great to grab on the go and satisfy those sugar cravings. The best thing is that you don’t need to follow an exact recipe, get creative and throw in whatever ingredients you have!

Servings – 18-20 balls
- 1 Cup of Pitted Medjool Dates
- ½ cup of Oats
- 2 Tbsp of Natural Peanut Butter
- Gogi Berries
- Pumpkin Seeds
- Chia Seeds
- 1 Tbsp Cocoa Powder
- Finely Ground Coconut (for rolling)
- 1-2 Tbsp of Warm Water
- Place all ingredients (except for the coconut) into a blender or food processor.
- Blend on low to medium speed until mixture is blended. If you find it too crumbly you can slowly add more water until desired texture. If the mixture is too wet you can add more oats until you get a sticky mixture that doesn’t stick to your hands.
- Roll mixture into 1 inch balls and place aside on a piece of parchment paper.
- Place coconut on a plate and roll the balls in coconut until completely covered. You can also use nuts, seeds or just leave plain. Whatever you desire!
- Place in the fridge in a sealed container for lasting freshness.
