Chocolate Raspberry Energy Balls

These little beauties are such a treat to eat AND good to look at. Seriously, these energy bites will give you LIFE!

Servings – 12-14 balls

Ingredients

  • 1 cup pitted dates
  • 1/4 cup rolled oats
  • 1/4 cup gogi berries
  • 1/4 cup pecans
  • 3 tbsp chia seeds
  • 2 tbsp cocoa powder
  • 1/8 cup cocoa nibs
  • 1/4 cup Freeze dried raspberries
  • Water

Instructions

  1. In a blender place the dates, oats, gogi berries, chia, pecans, cocoa powder and cocoa nibs and blend on high until completely combined and there are no big chunks left.
  2. Add in a tablespoon of water at a time and continue to blend after each tablespoon until you reach your desired texture. You should be able to mold the mixture in your hands without it sticking too much. If too dry, add more water. If too sticky, add more dry ingredients such as oats.

  3. Roll the mixture into 12 1 inch balls and place on a board. In a clean blender, blend your freeze dried raspberries until it makes a powder and pour into a shallow bowl.
  4. Roll each ball into the powder until completely covered. Place in the refrigerator to harden and to keep its freshness.
