Do you ever walk through the grocery store and wonder how to use those beautiful green spiral vegetables that only seem to come out for only a few weeks a year? Well, do I have the recipe for you. Using fiddleheads in your salads is surely going to turn heads at your next get together.
Prep Time – 20 minutes
Cook Time – 10 minutes
Servings – 4-6
Ingredients
½ lb Fiddleheads trimmed and steamed
½ lb Edamame steamed
Large handful of Spinach
¼ cup Chopped Cilantro
5 Tbsp Olive Oil
2 ½ tbsp of Lemon Juice
Crumbled Goat Feta
Sea Salt and Pepper to taste
Instructions

- Put a steamer on top of a pot with a bit of water on the bottom. Place the edamame and fiddleheads in the steamer and cook for about 15 minutes. Rinse with cold running water. Drain well.
– - In a small bowl, whisk together lemon juice, olive oil, sea salt and pepper. Pour the lemon juice dressing over the vegetables and tossing until lightly coated.
– - To serve, top the salad with some feta cheese, some freshly ground black pepper and cilantro.
