Edamame and Fiddlehead Fern Salad

Do you ever walk through the grocery store and wonder how to use those beautiful green spiral vegetables that only seem to come out for only a few weeks a year? Well, do I have the recipe for you. Using fiddleheads in your salads is surely going to turn heads at your next get together.

Prep Time – 20 minutes

Cook Time – 10 minutes

Servings – 4-6

Ingredients

½ lb Fiddleheads trimmed and steamed

½ lb Edamame steamed

Large handful of Spinach

¼ cup Chopped Cilantro

5 Tbsp Olive Oil

2 ½ tbsp of Lemon Juice

Crumbled Goat Feta

Sea Salt and Pepper to taste

Instructions

    1. Put a steamer on top of a pot with a bit of water on the bottom. Place the edamame and fiddleheads in the steamer and cook for about 15 minutes. Rinse with cold running water. Drain well.
    2. In a small bowl, whisk together lemon juice, olive oil, sea salt and pepper. Pour the lemon juice dressing over the vegetables and tossing until lightly coated.
       –
    3. To serve, top the salad with some feta cheese, some freshly ground black pepper and cilantro.
